remember when I said I would
share the recipes I had made on mother's day?
I have the habit of bookmarking tons of recipe with the intentions to make them. but being honest, I don't really make them. it's too much work to go out and buy ingredients that are not normally in my pantry. and sometimes I'm just too darn lazy. but for mother's day, I was prepping and cooking for what seemed like forever.
mixed green salad with pecans, goat cheese, and honey mustard vinaigrette
so yummy. yes I followed a recipe for a salad (says a lot about what level I'm at in the kitchen). I substituted feta cheese for goat cheese. the dressing is good, change it a bit to your liking, I added more honey mustard and honey so it matches my palette. so easy to make and I've made it several times for lunch now. crab mango and avocado salad
I knew I had to make this after seeing crab and avocado in the title alone. being raised in the west coast has spoiled me. avocados and dungeness crab are easy to come by and my love for these two items started before I could read. with that said, this recipe was good, but I thought the mango puree deterred the taste of the avocado and crab. it would have been good without the mango puree. but nonetheless, still good. classic sole meuniere
so simple and good. buttery and lemony. crispy but not too crispy. and very easy to make. I ended up buying more sole filets so I can whip this up when I'm hungry. I am shocked at how easy and delicious it is. for the time it takes to prep and make this, you wouldn't expect such a yummy dish. and what a surprise when I learned that the recipe was from molly from orangette (love her blog and book!). so whip yourself up a simple dinner, make the 1st salad and fish dish. you'll be surprised how such a delicious meal can be made in a matter of minutes. (the crab, mango, avocado salad takes a LONGG time to make and honestly not worth all the trouble and $$$)
